blog fail

It's been an EXTREMELY long week & I haven't blogged since Tuesday, thus missing my favorite "What I'm Loving Wednesday". I guess I'll just have to come back twice as strong next week.

Yesterday, I called in sick to work because I thought my head might actually float off my body. My sinuses were that terrible. If you know me at all you know that I can never just sit down & watch a TV show or movie without getting up 800 times to take Bristol out or wash dishes or do laundry. I am my mother's daughter. Yesterday was no different. My body was telling me to just sit down and rest since I haven't been sleeping at all for weeks but my mind was racing with things I needed to do. I really didn't want to do housework so I thought I would do something fun instead. I found a great recipe on Wednesday on Pinterest. Here it is.

Pink Lemonade Fudge
It is SO simple, y'all.
First, you get your butt to Wal-Mart and pick up one bag of white chocolate chips,

a small packet of Pink Lemonade Kool-Aid,

& a can of Pillsbury Pink Lemonade frosting.
 
Believe it or not, that was the hardest part. Now you just need to get an 8"x8" cake pan and line it with foil. Spray some PAM so the fudge won't stick to the foil.

After that, dump the chocolate chips into a microwave safe bowl and heat on high for 1 minute. Take them out, stir, add a touch of vegetable oil, stir again, and cook on high again for 30 seconds. Take them out and stir again.

Immediately stir in the Kool-Aid packet.

Now you may want to move to a little bit bigger bowl and combine the entire can of frosting with the mixture. Once it is all mixed, pour it into the cake pan and refrigerate for 2 hours before you cut into it to make sure that it's set :]

Mine doesn't look as pretty as the Domestic Rebel's did but it sure tastes yummy! Next I'm going to try just regular old chocolate chips with chocolate frosting and see if I get the same result. I'll let you know!

So that this post isn't all about eating (makes me look like a fat kid haha), here's me & the BF last weekend at one of our friends' shrimp boil! It was a blast!

Time Travel Tuesday

This time last year, I was finishing up my last spring semester at UT-Knoxville and preparing for graduation. I was soaking up all the time I had left with my amazing sisters/best friends. There is so much going on in the spring on campus from philanthropy events to SGA campaigns to making sure you get at least a C in all your classes so you can graduate(haha).


Bruce Pearl had just been fired from coaching our men's basketball team. Reporters were EVERYWHERE on campus. It was nearly impossible to get to class with all the traffic and people shoving microphones in your face.

I had just gotten back from Spring Break in Key West, FL. It was GORGEOUS to say the least. St. Patrick's day was insane down there. I'm talking naked people painted green, homeless guy dressed as Spiderman..you get the picture.

I'm excited to continue this link up for the next however many Tuesdays :]

yum yum. gimme some.

i am EXTREMELY proud of myself for the dinner i made on Friday. it's still Lent and even though John isn't Catholic, he still eats a meat-free meal with me on Fridays :] what a sweetheart. the only fish i had at my apartment was 4 cans of tuna. he hates tuna so this wasn't really an option. he does, however, love tilapia.

i stopped by Kroger on my way home & picked up 2 fresh, right out of the case pieces of tilapia. these things were huge & they only cost me $5.99 for both! what a steal. i also wanted to marinade them in something to give a little extra flavor. i didn't call my mom on this one(shocker). i walked down the condiment aisle and found the marinades. after looking for a while, i chose the Kroger brand Teriyaki 30-Minute Marinade(only $0.99!!!).

i came home & looked up a quick tilapia bake recipe just to see what temperature/how long to cook it because i didn't want to overcook. i turned on the broiler and while it was heating i poked holes into both sides of each piece with a fork and poured the marinade on. now you would think it would be common sense with the name of the marinade but John asked me how long he would have to wait. silly boy. after him following me around the kitchen, my annoyance made me take the filets out of the fridge after only 10 minutes. i was kind of afraid it hadn't had enough time to sit, i poured a little bit more marinade on & stuck the filets in the oven for 3 minutes. i took them out, flipped them, and cooked the other side for 3 minutes. it was crazy to me how fast they cooked. i then lowered the heat to 425, stuck the garlic bread in for 6 minutes, heated some corn(the only veggie my picky boy will eat) and VOILA! there's a picture on my camera i'll upload later. he had his entire meal finished before i even finished my corn. needless to say, he loved it and so did i :] such an easy meal when you're on limited menu options.

1 Chronicles 16:11

this post is going to be a tad bit sad. i'm having a rough day as we all do. surprisingly, it's nothing to do with work but with John. he is leaving April 11 to go to boot camp for the Navy. hitting the 30 day mark really affected me. i'm going to miss him so much and i really have no idea how i'm going to go weeks without talking to him. i've been reading other blogs of military girlfriends and wives trying to find a little comfort and it has helped a little. i luckily have a good friend here [at least until May] that has a boyfriend in the Navy so we can cry, talk, watch movies, and just hang out together. nobody understands until they've lived through it and that's what makes me the most nervous. i am a total type A personality. i plan. that's what i do. the part that gets me is you can't plan in this type of situation. you just have to wait for letter, phone calls, orders, etc. i found my favorite quote while i was looking for quotes about strength.
i have to be strong for him and let him know that i'm okay and that he doesn't need to worry about me. sometimes i get really upset and cry in front of him but i really try not to. this will be a true test of our relationship and i am not worried for a second that we won't pass with flying colors. at least i have my little Bristol to keep me company and my mom when i'm having a bad day.

no matter what you're going through, it could always be worse. i'll try to keep this in mind as we embark on this rough transition.

the way to a man's heart is through his stomach.

i was so excited about my new crock pot that my mom just got me so i called her and asked her an easy thing to cook in it. she suggested pot roast, which i love. i went to kroger on monday and got a 1.8 lb roast, carrots, baked potatoes, rolls, and seasoning. the recipe is SO easy and SO delicious.

this is the crock pot my precious mother got me from target. you should definitely invest in one.
the first thing i did was read the back of the seasoning, which called for you to mix the packet with 2 cups of water. after that, i stuck the meat and carrots in and left it on low all day while i was at work.

i opened my apartment door to smell yummy pot roast :] i stuck the baked potatoes in the microwave to cook, pulled the roast apart with a fork and put it on 2 plates for me & john. he ate almost the entire thing just by himself.
lesson to me and all you young ladies out there: it doesn't take much to please your guy and you can't go wrong with such a simple dish. let me know if you have any other simple recipes for me to try!
